Build a better burger
How to prepare terrific hamburgers:
When preparing a hamburger there are a few things to keep in mind:
- For juicy hamburgers avoid making the burgers too big. Oversized burgers need more time to cook, which can dry out the surface of the meat before the inside is done. Five ounces of raw beef makes the perfect burger.
- When shaping your hamburgers, handle the meat as little as possible. Shape each patty by lightly passing the meat back and forth between your cupped hands until it's about 3/4-inch-thick and about 31/2-inch diameter.
- Handle the meat just as long as it takes to make the patty. Over-handling the meat will make the burger tougher.
- Let the shaped hamburger patties sit at room temperature for about 5 minutes before cooking. The meat should feel cool but not cold to the touch. If the meat is too cold, the burgers will cook unevenly.

Ways to cook your hamburgers:
Pan-Fried/Sautéed
A well-seasoned cast iron skillet or griddle is ideal for cooking hamburgers. It gives you a juicer, crustier hamburger. It is also much easier to control the degree of doneness.
Broiled
Broiling hamburgers can be very tricky because they can be dry. However, placing a chip of ice in the center of each patty before broiling will help restore some of the juiciness.
Grilled
Bring burgers to room temperature before placing on preheated grill. Be sure not to flip patties back and forth as this will cause loss of flavor. Add cheese during the last 2 minutes of cooking.
