Ingredients
- For Sweet Potatoes:
- 4 Sweet Potatoes (Medium)
- 1 tsp Kosher Salt
- 1 tsp Garlic Powder
- 1/2 tsp Paprika
- 1/2 tsp Chili Powder
- For Mexican Street Corn:
- 16 ozs Cottage Cheese
- 1 cup Corn (Canned)
- 1 clove Garlic (Grated)
- 1 Lime (Juice)
- 2 oz Cojita or Feta Cheese
- 1/4 cup Cilantro (Finely Chopped)
- 1/4 cup Green Onion (Sliced)
- 1 tsp Tajin Mexican Seasoning
- For Ground Beef:
- 1 lb Laura's 92% Lean Ground beef
- 1 pkg Taco Seasoning (Standard Size)

Preparation
Instructions:
1. Cut the sweet potatoes in half lengthwise, spray with cooking spray, and season. Flip cut-side down and spray again, then sprinkle the skin with kosher salt. Bake at 425 for 22-26 minutes, until fork-tender and caramelized.
2. Blend the cottage cheese with an immersion blender or a regular blender. Stir the rest of the street corn ingredients in and refrigerate.
3. Brown the beef in a hot skillet with oil, pressing down pieces to get crispy bits. Stir in the taco seasoning according to the package directions.
4. Top the sweet potatoes with beef, street corn, a drizzle of hot honey, and more cilantro!
