- 2 tbsps Worchestershire Sauce (May substitute coconut aminos)
- 2 tsps Dijon Mustard
- 2 cups Fresh Spinach (Chopped)
- 1 cup Cheddar Cheese (Shredded)
- Fresh Chives or Parsley (Optional for garnish)

Directions:
1. Place a large skillet over medium-high heat. Add the oil. Once oil is hot, add the potatoes and ½ teaspoon salt.
2. Cook for about 8-10 minutes or until potatoes are starting to brown and partially cooked through (they won’t be fully cooked), stirring every 2-3 minutes.
3. Push potatoes to one side of the pan. Add the beef, onion, garlic, remaining ½ teaspoon salt, smoked paprika, and black pepper.
4. Break up the beef and cook for 7-9 minutes or until browned, stirring occasionally. Once the beef is mostly cooked through, begin to mix the potatoes into the beef mixture. Continue to cook until beef is cooked through.
5. Add the tomato paste, Worcestershire, mustard, and spinach. Stir to mix well. Lower heat to medium. Cover and cook for 5 minutes.
6. Top evenly with cheese and cover. Turn heat to low and cook for 3-5 minutes or until the cheese is melted. Remove from heat and let sit for 5 minutes.
7. Garnish with optional fresh parsley or chives. Top with optional Faux Top the Tater and/or hot sauce.
8. Store leftovers in an airtight container in the refrigerator for up to 4 days or in the freezer for longer storage.

Ingredients:
1 cup sour cream
3 tablespoons minced fresh chives (may substitute 1 tablespoon dried chives)
1/2 teaspoon white vinegar
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1 pinch fine salt
Directions:
1. Combine sour cream, chives, vinegar, garlic powder, and onion powder in a small bowl.
2. Mix to combine.
3. Taste and season with salt and mix again.
4. Serve immediately or store leftovers in an airtight container in the refrigerator for up to 4 days.
