Preparation
A hearty, veggie-packed pasta made with 96% lean ground beef and a simple simmer sauce, all in one pan!
Ingredients:
- 1 lb Laura’s Lean 96% ground beef
- 1 tbsp extra virgin olive oil (EVOO)
- 1 onion, chopped
- 1/2 red onion, chopped
- 1 cup beef broth
- 1/4 cup chopped tomatoes
- 1 cup carrots, chopped
- 1/2 cup frozen green peas
- 1 zucchini, shredded
- 1 cup bow tie pasta (dry)
- Salt & pepper, to taste
- Shredded parmesan cheese, for serving
Instructions:
- Heat olive oil in a large pan over medium heat. Add the onion and red onion, and cook until softened and fragrant, about 3-5 minutes.
- Add the ground beef to the pan. Cook until fully browned, breaking it up as it cooks. Drain excess fat if needed.
- Stir in the beef broth and chopped tomatoes.
- Add carrots, peas, shredded zucchini, and dry bow tie pasta directly into the pan. Season with salt and pepper.
- Cover and let simmer for about 15–20 minutes, stirring occasionally, until the pasta is cooked and the liquid has mostly absorbed.
- Top with shredded parmesan cheese and serve warm.
