Preparation
Turn a pound of Laura’s Lean 92% Lean Ground Beef into a rich and satisfying one-pan dinner with this Creamy Ground Beef Gnocchi. Savory ground beef and onions are combined with fire-roasted tomatoes, fresh spinach, Parmesan cheese and pillowy gnocchi in a creamy, flavorful sauce.
Best of all, everything comes together in a single skillet, making this an easy option for busy weeknights when you want something hearty without a lot of prep or cleanup. Finish with Parmesan, parsley and a sprinkle of red pepper flakes for an extra pop of flavor.
INSTRUCTIONS
1. Heat a large skillet over medium-high heat. Add 1 lb Laura’s Lean Ground Beef to the skillet with the chopped onions. Season with salt, pepper, smoked paprika, and Italian seasoning. Drain any grease, if necessary.
2. Add minced garlic, a can of diced tomatoes, spinach leaves, beef broth, heavy cream, Parmesan cheese, and gnocchi to the skillet.
3. Bring the whole skillet to a boil. Lower the heat to medium low. Cover with a lid and let cook for about 5 minutes.
4. Remove the lid, stir well, and cook for a few more minutes or until gnocchi is tender.
5. Serve and top with more Parmesan cheese, dried parsley, and red pepper flakes.
