1. One-Pot Ground Beef & Potato Stew
Ingredients:
- 1 lb. Laura’s Lean Ground Beef
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 large potatoes, diced
- 2 carrots, sliced
- 1 (8 oz) can tomato sauce
- 2 tbsp tomato paste
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cups water or beef broth
Instructions:
Brown beef with onions and garlic. Add diced potatoes, carrots, tomato sauce, and seasonings. Pour in water or broth and simmer until vegetables are tender.
2. Ground Beef & Vegetables Burrito
Ingredients:
- 1 lb. Laura’s Lean Ground Beef
- 1 tbsp olive oil
- 1/2 cup onion, diced
- 1/2 tsp cumin
- 1/2 tsp paprika
- 1/4 tsp coriander
- 1 tbsp tomato paste
- 1 zucchini, diced
- 1 carrot, shredded
- 1/2 cup corn
- 1/2 cup diced tomatoes
- 1/2 cup black beans
- 4 large tortillas
- 1/2 cup shredded cheese
Instructions:
Cook onion and beef in olive oil. Add spices, tomato paste, and vegetables. Simmer and wrap mixture in tortillas with shredded cheese.
Ingredients:
- 1 lb. Laura’s Lean Ground Beef
- 1/2 cup onion, chopped
- 1/2 tsp smoked paprika
- 1/2 tsp cumin
- 1/4 cup chopped olives
- 2 hard-boiled eggs, chopped
- 1 package empanada dough or puff pastry
- 1 egg (for egg wash)
Instructions:
Brown beef and onion; stir in spices, olives, and eggs. Fill dough rounds, seal, brush with egg wash, and bake until golden.
Ingredients:
- 1 lb. Laura’s Lean Ground Beef
- 8 oz pasta, cooked
- 1/2 cup onion, chopped
- 1/2 cup bell pepper, diced
- 1 tsp Italian seasoning
- 1 (14 oz) can crushed tomatoes
- 1/4 cup basil pesto
- 1/4 cup half & half
- 1/2 cup shredded mozzarella cheese
Instructions:
Brown beef with onion and bell pepper. Add seasonings, tomatoes, and pesto. Stir in cream and serve over pasta with cheese.
Ingredients:
- 1 lb. Laura’s Lean Ground Beef
- 1/2 cup crushed saltines
- 1/4 cup onion, diced
- 1/4 cup green bell pepper, diced
- 1 egg
- 1/4 cup ketchup
- 1/4 cup milk
- 1 tbsp Worcestershire sauce
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions:
Mix all ingredients. Form into loaf shape, place in pan, top with ketchup, and bake at 350°F for 55–60 minutes.
