Summer is the season of flip flops, fireflies, and family time—and at Laura's Lean, we know it's also when dinner can finally feel less rushed and more meaningful. With the kids out of school and calendars a little looser, summer is the perfect time to bring everyone together around the table. But just because the days are more relaxed doesn't mean moms aren't still managing a million things.
That’s why we put together five easy, make-ahead recipes using Laura’s Lean ground beef. They’re lighter (because summer), prep-friendly (because sanity), and family-approved (because kids). Ready to make mealtime a breeze?
Grilled Cajun Meatball & Veggie Kabobs with Remoulade Dipping Sauce
Ingredients:
- 1 lb. Laura’s Lean 92% Ground Beef
- 1 Tbsp Cajun seasoning
- Salt and pepper to taste
- 1/4 cup breadcrumbs
- 1 egg
- Assorted vegetables (e.g., bell peppers, onions, zucchini), cut into chunks
- Olive oil spray
- 2 Tbsp butter
- 1 tsp Cajun seasoning (for butter)
Remoulade Sauce:
- 1/2 cup mayonnaise
- 1 Tbsp mustard
- 1 tsp horseradish
- 1 tsp Worcestershire sauce
- 1 tsp lemon juice
Instructions:
- Soak wooden skewers in water for at least 30 minutes.
- In a bowl, mix ground beef, Cajun seasoning, salt, pepper, breadcrumbs, and egg. Form into 1-inch meatballs.
- Thread meatballs and vegetables onto skewers.
- Spray kabobs with olive oil spray.
- Melt butter and mix with 1 tsp Cajun seasoning.
- Preheat grill to medium-high heat. Grill kabobs for 4-5 minutes on each side, brushing with Cajun butter during the last 2 minutes.
- For the remoulade sauce, combine all ingredients in a bowl and whisk together.
- Serve kabobs with remoulade sauce on the side.
Korean BBQ Beef Lettuce Wraps
Ingredients:
- 1 lb. Laura’s Lean 92% Ground Beef
- 1/2 cup BBQ sauce
- Butter lettuce leaves
- Matchstick carrots, shredded cabbage, green onion
Instructions:
- Cook beef until browned; stir in BBQ sauce.
- Spoon into lettuce leaves and top with veggies.
- Store filling and lettuce separately until ready to serve.
Beef Taco Mason Jar Salads
This recipe is heart-check certified by the American Heart Association
Ingredients:
- 1 lb. Laura’s Lean 96% Ground Beef
- 1 packet taco seasoning
- 1 cup corn kernels
- 1 cup black beans
- 1 cup chopped romaine
- 1/2 cup shredded cheddar
- 1/2 cup salsa or dressing of choice
Instructions:
- Cook beef with taco seasoning; let cool.
- Layer in mason jars: salsa, beef, beans, corn, cheese, lettuce.
- Shake and eat when ready
Asian Beef Stir Fry Meal Prep
Ingredients:
- 1 lb. Laura’s Lean Ground Beef (92% or 96%)
- 1/3 cup low-sodium soy sauce
- 1 tbsp sesame oil
- 2 cloves garlic, minced
- 1 tsp ginger
- 2 cups stir-fry veggies (bell pepper, broccoli, snap peas)
- 2 cups cooked rice
Instructions:
- Brown beef with garlic and ginger.
- Add soy sauce, sesame oil, and veggies, stir-fry until tender.
- Divide into containers with rice.
Greek Pita Tacos with Tomato Cucumber Salsa & Tzatziki
Ingredients:
- 1 lb Laura’s Lean 92% Ground Beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp dried oregano
- Salt and pepper to taste
- Pita bread
Tomato Cucumber Salsa:
- 1 cucumber, diced
- 2 tomatoes, diced
- 1 Tbsp olive oil
- 1 Tbsp lemon juice
- Salt and pepper to taste
Tzatziki Sauce:
- 1/2 cup plain Greek yogurt
- 1/2 cucumber, grated and drained
- 1 clove garlic, minced
- 1 Tbsp lemon juice
- 1 Tbsp chopped fresh dill
- Salt and pepper to taste
Instructions:
- In a skillet, cook ground beef over medium heat until browned. Add onion, garlic, oregano, salt, and pepper. Cook until onion is translucent.
- For the salsa, combine diced cucumber and tomatoes in a bowl. Add olive oil, lemon juice, salt, and pepper. Mix well.
- For the tzatziki, combine Greek yogurt, grated cucumber, garlic, lemon juice, dill, salt, and pepper in a bowl. Mix well.
- Warm pita bread.
- Assemble tacos by placing beef mixture on pita, topping with salsa and a dollop of tzatziki sauce.
Make-ahead meals, made for memory-making.
